What is a Samosa?

A samosa is a fried South Asian pastry with a savoury filling, including ingredients such as spiced potatoes, onions, peas, meat, or fish. It is made into different shapes, including triangular, cone, or crescent, depending on the region.

How To Air Fry Samosa

Method 

To Make the Outer Shell Of The Samosa:

  • Take maida in a bowl; add salt, ajwain, and ghee. Mix well. Now slowly add 1-2 tablespoons of water and knead a stiff dough; keep aside for 20 minutes.

To Prepare The Filling:

  • Heat oil in a pan. Add cumin seeds and ginger-green chilli paste and cook for a minute.
  • Add the peas (if needed, add a little water and cook till the peas are done). Now add in the mashed potatoes along with salt, red chilli powder, coriander powder, cumin powder, garam masala powder, and amchur.
  • Mix well, and cook until the filling mixture is dry. Keep it aside to cool down.

To Assemble The Samosa:

  • Divide the shell dough into round balls. Roll them out using a rolling pin. Make them oval in shape. Now cut them into halves. 
  • Use water on the straight-cut side to seal the shell in the shape of an open cone. Now add the filling to the cone and leave enough space on top to seal the samosa.
  • Add a little water along the lining to seal the samosa. Make all the samosas in this manner and keep them aside for 15 minutes.

To Airfry Samosas:

  • Preheat the air fryer to 160 °C or 320 °F for 5 minutes. Now brush the samosas with a little oil and place them in the air fryer.
  • Air fry at 160 °C for about 8 minutes. Flip them once in the middle of the cooking.
  • Now air fry at 200 °C for about another 6–8 minutes, until the samosas look done and golden.
  • Serve hot with mint and tamarind chutney or ketchup.
