Gem squash is a variety of summer squash that may have been domesticated from two wild varieties; Cucurbita Texana found in the southern and central United States and Cucurbita fraterna found in Mexico. The dark green spherical fruit, when fully ripe, is about the size of a tennis ball.

How much does a gem squash weigh?

The rind is smooth and the mature fruit weighs 300 – 350 g. The rind color of the baby is very dark green with slightly lighter flecks.

Fruit mature to very dark green with good holding ability, uniformity, and shelf life. Gemini can be used as a baby squash in pre-packs and mature fruit on the fresh market.

How long does gem squash keep?

Gem squash should not be stored for long periods as the yellow flesh starts to dry out. Storage should be in a cool and dry space and not for more than three weeks.
