Do supermarkets sell agar-agar?
You can usually find agar powder or agar flakes in the baking aisle of your neighborhood grocery stores or specialty stores such as Asian supermarkets, natural food stores, or health food stores.
How much agar powder per liter?
Fifteen grams
Fifteen grams of agar per liter of liquid actually goes in a standard laboratory recipe, while ten (or even as little as eight) grams is a much more appropriate amount to use in cooking.
Does agar agar need to be heated?
Agar may be dispersed in either a hot or cold medium. Hydration (dissolution) occurs at temperatures above 90°C; heating the solution to a boil is necessary for gelling. Setting occurs at 35-45°C, and onset is rapid (within minutes). Melting of agar gels occurs at 80-90°C.
Does agar agar expire?
Agar Agar powder has a pretty long shelf life, even decades of expired agar still works fine.
But if the container was opened it might have picked up some moisture from the air which will weaken how well it gels. It will be pretty obvious if you mix a test batch, just mix a bit in a paper cup and see if it gels.
